In reality, a dumpling refers to anything from empanadas to pot stickers to ravioli—these are all made with dough and filled with something. These dumplings can be made 1 day ahead; just cover and chill until you are ready to cook them.

For an extra dash of color and heat, drizzle them with with hot chile oil and sprinkle them with with pungent Chinese chives before serving them with dipping sauce.
