  • Pour mixture through a fine wire-mesh strainer into a medium-size heatproof bowl; using a rubber spatula, press solids against strainer to extract liquid. Discard solids. Stir salt and pepper into sauce. Let cool 5 minutes. Season with additional salt and pepper to taste.

Sauce can be refrigerated in an airtight container up to 3 days; reheat in a saucepan over low.
