I did not serve it with whipped cream as suggested but I can tell that it would be a great addition, especially if the cream were flavored with something that balances well with the spice. I could see coffee, lemon, or chocolate being used. Also, because it is a dense cake a cream cheese frosting would probably work well too, but only spooned onto the cake when served, or on the side so you don't ruin the sugar crust.
The quinoa adds more of a texture than flavor, and it also makes for an interesting presentation because you can see the little pearls throughout a cut piece.
The recipe as it is written is a little confusing. It says things like "add the sugar" when later on you find out that it was supposed to be divided with 1/2 cup set aside for the topping. I had to decide if it meant 2 1/2 cups of sugar was meant to go in the batter. The same goes for the mace, it's supposed to be divided but doesn't say that anywhere.
