Delicious!! Only thing I'll change next time is save a potato on the side to add back in as smaller pieces so my boyfriend has something to bite, as that was his only feedback. We put a bit of bacon and cheese on top, lovely soup!
This potato and leek soup is the best version of a fall favorite! It freezes well, too. Serving half, I froze the remainder in ziplock freezer bags. Later, when needed, I’d thaw a bag three minutes in the microwave and heated it on the stove.
