They are just okay cupcakes. Tasted kind of bland to me. A little bit oily. I have not made carrot cupcakes before so I am not sure how to change it.
Great recipe - comes out airy and not as oily as other carrot cupcakes, and fabulous even without frosting. I like to add crushed toasted pecans for added texture and flavor!
I added a little bit of homemade apple butter and it's even more delish!
just made one today and now waiting for it to cool to start eating it! So excited. lol
