I have been making these at least a couple times a year since the May 2010 issue arrived in my mailbox. I usually make flour tortillas instead of corn, make hot sauce available instead of just salsa verde. But that's just tinkering -- this is the best chicken taco I have ever had.
I used 1 pound of boneless skinless thighs and started the recipe the night before. Since the marinade is high acid, the following morning at 7am, I transferred the thighs from a large bowl to a smaller bowl and left some marinade on to keep the thighs moist. This worked out quite well. I served the tacos with spicy black beans, an cheater-version of Mexican rice and cheese, avocados and salsa verde. These were phenomenal!
