You can also use a glass container with a lid instead of a single use plastic bag to marinate. Just sayin'!
Just finished dinner from this recipe. I lived in the Philippines for almost 3 years many years ago and still make many Filipino dishes. In the RP food is regional like any other country and I lived in Pampanga, and I'm not Filipino, so take it with a grain of salt (pun intended). I wanted to try this because I love to grill and the marinade is simple. It turned out very juicy with crispy skin, but the flavors from the marinade were pretty subtle. However... I prefer to spatchcock my chicken when grilling so I just did that and then split the chicken in half and marinated for 24 hours, maybe it didn't have enough exposure to the marinade. Also, while there are a lot of Chinese influences in the RP, the star anise seemed unusual to me but added a nice sweet fragrant note to it. When I was there, the choice was either skewered chicken bbq sticks, or whole rotisserie chicken injected with some kind of calamansi/soy/ginger/garlic solution (and OMG let me tell you there was this little stand on the way home that had some of the best of that I've ever had). Anyway, it wasn't exactly what I was hoping for, but it was still delicious. It's a good introduction for newbies. Would I make it again? Yep. And it was great with my favorite Oklahoma BBQ sauce. In the RP it would be based on banana ketchup, which is something else everyone should try. Three thumbs up if you're new to Filipino cuisine.
