I am gluten-free so we used buckwheat pasta from Italy, which worked out great. I am also off of nightshades and dairy so we left out the chile flakes and parmesan. We used chicken bone broth (instead of pasta water as recommended), which worked great. The recipe is only for 2 so we doubled it for our family of 4. It was a big hit with the family. We will be making it again.
