Made exactly as written, and it was delicious. I did halve the recipe, for just me,and added a few shrimp. I'm sure I will make this again!
Does the shrimp cook in the residual heat?
I make this all the time from the original F and W page on which it appeared. The same technique works with roasted butternut squash substituted for the shrimp.
This recipe was so fast and easy. Was it really risotto? No. But it was still delicious. Did it as written, except didn't use the pesto as it was already quite lovely. Will definitely make it again and again. Also added some diced zucchini sautéed in butter until golden brown because I wanted a little bit of veg.
I have added this recipe to my meal rotation. I love the flavors and the easy preparation. I do not add the basil pesto or the lemon juice. Ths recipe is a keeper!
Out of Arborio rice! All that’s left is Calrose rice! Maybe if I add a sauce. Maybe another time.
What can you use as a substitute if you don't own an enameled medium cast-iron casserole dish? I have Pyrex glass.
Baking risotto was a pleasant surprise! This recipe misses a couple standard ingredients like shallot and wine. But will definitely make again with a couple additions.
