Alpana Singh: The New Spain

This cava (brand new to the United States!) is an homage to the Catalan heritage - made in the traditional method, and then aged for 15 months.

Xarelo is one of the main grape varieties that is used to make cava - that grape contributes acidity to cava, and this wine is delicious with "any type of food you'd squeeze lemon on" like ceviche or fried calamari.

Alpana describes Verdejo as "the Sauvignon Blanc of Spain" - if you like Sauvignon Blanc, but want to add something different to your repertoire, add a Verdejo like this one from the famed Torres family.

Godello kicks it up a bit in terms of texture. From Galicia - a verdant, lush, green area of Spain - Alpana describes this Godello as almost a cross between Chardonnay and Muscadet. Like the other white wines above, Alpana hopes it will inspire you to add a new varietal into your life.

Mencía is often known as a doppelgänger for Pinot Noir, and it's making an appearance on more & more wine lists. This Mencía from the Otero family estate is made in a juicy, ebullient Pinot Noir style that Alpana recommends serving chilled.

Monastrell in Spain has been used to make really good $6-$10 wines. Here, Alberto Otre produces a wine with depth, elegance, and restraint. You could pair it beautifully with lamb, duck, or short rib.

This grape variety was new to Alpana! Indigenous to the Penedès region, Sumoll was once nearly extinct but was recovered from cuttings in 2014. It's light-bodied, fresh, juicy, and pairs well with pork, lamb, and even barbecue.
